Did you unsubscribe from them all on Steam? Do that, then delete them from your folder again. I've had all these exact issues you're having, it's just a matter of doing things in order and properly

well gmod opens again, but still crashing when workshop is complete

Odd, delete the whole Garry's Mod folder and try reinstalling. Seems like that's the only aolution.
