When someone is shot, damaged or blood is displayed on the ground does it come up as Pink and Black squares? I've been starting to lose lots of textures and props recently, like the White Barrier in Construction Props, in Gmod.

No, not for the walls, just for the players. A quarter of their body turns into missing textures.

Valîdate game files.

Yeah best option is to go into your Options, Properties of Gmod and Validate the Integrity of the game. This will install all the missing default files.
