Could it be because the console market is the biggest market in videogames at the moment? You'd be hard-pressed to find videogames released on consoles and PC simultaneously and PC sold more copies. You talk as if it is something unique to TES games, when it goes for nearly all videogames.
Again, it's not necessarily pandering to the console crowd, but streamlining it. And I don't see how quick exits at dungeons are for the more sophisticated videogamers. It reeks of PC-elitism.
